Where the weight goes
Raw ground turkey is mostly water, 72.6 g per 100 g, and the pan drives part of it off: USDA's cooked crumbles hold 61.1 g per 100 g. The protein stays in the meat, so the converter derives the yield from it, 18.73 g per 100 g raw against 27.1 g in the crumbles. The broiled patties, cooked in one piece, hold 25.86 g and keep 72.4%.
Turkey or beef?
Ground turkey sold as 93% lean carries 8.34 g of fat per 100 g raw, against 10 g for 90/10 beef in USDA's data. Cooked, the turkey crumbles keep 69.1% of their weight and 90/10 beef crumbles 69%, so the two shrink alike. A 120 g raw turkey patty grills to about 87 g.
A worked example
Brown 200 g of raw ground turkey and expect about 138 g of crumbles. The raw entry gives 300 kcal and 37.5 g of protein; the cooked entry, for 138 g, gives 294 kcal and the same protein. Lean turkey gives up little fat, so the two sides land within 2% of each other.
What about fattier turkey?
The pairs here are for 93% lean turkey. Fattier blends lose more of their weight as fat melts into the pan, the way ground beef does: USDA measured 80/20 beef crumbles at 67% of their raw weight. For an 85% lean pack, weigh it once raw and once cooked and you have your own figure.
Which weight should I log?
The one that matches your entry. For a batch you cook for the week, weigh the pack raw and log the raw entry, then split the cooked pot into portions with the recipe-portion calculator.
